3 ingredient pancakes

Yummy + nutritious = perfect brekkie combo

If you're always rushing to work and can't afford to spend hours cooking a decent breakfast, then this pancake recipe by the internationally renowned top model Karlie Kloss is definitely for you. Simple and easy to make, you only need 3 common household ingredients, specifically 1 egg, 1 banana and some porridge oats, to whip up this delicious and vegetarian-friendly morning treat. Feel free to spruce it up with some other add-ons like cinnamon, blueberries, and maple syrup to make your breakfast extra scrumptious. 

Guaranteed to taste waaaay better and more filling than a shop-bought muesli bar (which used to be my go-to brekkie option whenever I was dashing out to beat the morning traffic).

Crunchy peanut butter & chopped chocolate cookies


Excuse my use of alliteration but I thought it was absolutely necessary to make this recipe sound extra special. I don’t normally bake in the morning; I tend to bake at the dead of night (just ask my mother if you don’t believe me). But last Sunday morning, I woke up craving to create something delicious. And since my jar of peanut butter had been staring at me from the bottom shelf of my kitchen cupboard for ages, I thought that it was definitely about time for it to be used in something other than just with toast and strawberry jelly.

So with that, I quickly pulled out my copy of The Hummingbird Bakery Cookbook and flipped immediately to their “peanut butter cookie” recipe.

With a crack of an egg, a whirl & twirl from the kitchen aid, and a quick tanning in the oven, my house was soon filled with a delicious aroma of warm peanut butter mixed with dark chocolate, casually wafting above my freshly baked and golden brown cookies (a dozen of them to be exact because I’d halved the recipe). I personally think that the secret behind achieving cookie perfection was definitely not over baking them and actually sticking to the short, “10 minute in the oven” instruction the book stated. I know it doesn't sound very long but believe me, if you let them cool for a bit, you’ll get the ultimate soft and chewy treat that I for one, and many others would too, lust for. Plus the tiny bit of crunch from the peanut butter makes it irresistibly delectable.


And of course, don’t forget to serve them with cold milk; that’s the most important part.

Fruit and Nut Muesli Surprise dotted with Fresh Blueberries


Starting the day off healthily

No I’m not going on a diet. I’m simply choosing to eat (slightly) more healthily than I did before. The best part about it was that I made an entire week’s plan of what I wanted to eat – no need to worry about what the next meal should be AND I've already stocked up on everything that I need.

Today, I start with muesli (or granola). It’s basically dried oats that have been stuck together, nothing fancy really. Well, that is, until you opt for the nut and fruit surprise packet. Crunchy, chewy and jam-packed with important nutrients (not that I could tell you what they are precisely), I personally have to say that it’s both a nourishing meal and an exercising session for our molars! And to make it just a bit more decadent, I topped mine with fresh blueberries.
